Prawn Fiesta Salad

My husband loves salad and could eat one every day.  This is a good thing, but I'll be honest, I don't enjoy it quite as much as he does.  That being said, I do love that something so healthy can also be fun and different.  I love the flexibility a salad allows to create your own masterpiece!   Here is my latest...

 

 

 

Ingredients

1 Package of Mixed Greens w/ Baby Spinach (this is more than enough for two people) - I think prawns with just baby spinach would also be good.

1 Pkg of Prawns (peeled & deveined). Size really depends on your preference.  I bought mine at Safeway as they always have fresh pre-packaged prawns available. 

Old Bay Seasoning

1 Garlic Clove

2 Tbsp Persian Lime Olive Oil (my personal preference)

Juice of 1/2 a Lime

 

Veggies & Other...

 

Red Onion

Raw Mushrooms

Cucumber

Cherry Tomatoes

Mango 

Cilantro

 

I didn't put me for the veggies as it is really up to you and how much you like.  For this type of a salad with so much going on, I Prefer to dice everything in small pieces. Since the prawns don't take that long, I dice first and get all my prep out of the way and then move on the prawns.  

 

Dressing...

I love experimenting with different dressings and condiments, but for this one I enjoy a little of the Persian Lime Olive Oil (can you tel I love it) mixed with another favorite - White Grapefruit Balsamic Vinegar (Del' Oliva - Eddie will hook you up) - a little goes a long way.  My husband prefers the El Torito Cilantro Pepita Caesar dressing which you can buy at Safeway.  There are so many varieties of dressing and healthier versions for sure these days, but I feel you can never go wrong mixing your own - be creative!

 

 

I love my Persian Lime Olive Oil which I purchase in Burlingame, CA from Del' Oliva.  If you are local and haven't been here, you must stop by!  Eddie (owner) does a fabulous job educating and mixing olive oil with vinegar for you to taste and experiment - combinations you would never dream of!  He offers food pairing suggestions as well. 

Overall it really is just a great experience! 

Anyway... back to the prawns :o). 

 

Heat a  few swirls of Persian Lime Olive Oil in a nonstick pan wait a few minutes then add the prawns.  I like the oil to be hot enough so my prawns sizzle when added.  

 

Add some Old Bay Seasoning

Add a little crushed garlic

Saute - I don't move them around too much... just let them hang out

A Splash of Lime Juice

 

The Old Bay with the Olive Oil will form a little crust on the prawns that's delicious.  I let them hang out for a few minutes on one side, then flip them over until they are no longer translucent.  

 

I let them sit for a few minutes so they are just warm when I place them on top of the salad.  Sprinkle a little cilantro and a splash of fresh lime - your healthy, fresh masterpiece is complete :o).

 

This is incredibly easy and you can add other seafood, steak, chicken, etc. to your salad.
